Mashed Potatoes
6 cups cubed redskin potatoes
3 heaping TBS horseradish
3/4 cup butter softened
1 1/2 tsp. salt, and to taste
1 1/2 cups shredded Gouda cheese. 

Boil potatoes until very soft - Drain.  
Add butter, salt and whip until butter melts. 
Whip in remaining ingredients. 
Serves about 6.

Hey, I didn't know you had a blog! Thank you so much for your comment. I'm trying to be optimistic, but you know a mom's mind - always thinking of the worst possible scenarios. I just want her to be functional and happy.

I can't believe you visited NY right after we left! What a bummer. We felt kind of lonely out there with not many visits from family. If you're ever in Chicago, be sure to let us know!
